Smoked Pork Belly Burnt Ends with Bourbon Glaze

From The Ultimate Big Green Egg Cookbook

This dish is pork’s answer to Brisket Burnt ends which is a BBQ staple. Instead of using a cubed brisket point, this recipe calls for cubed skinless pork belly. After making this dish and serving it to your guests, you will know why it is nicknamed “pork candy”!

Feeds: 6-8 people

Ingredients:

10 pounds pork belly (skinned & cubed)
1 Tbs Yellow mustard
½ cup brown sugar
1 Tbsp honey
1 stick of butter, cut into pats

Dry Rub:

2 Tbs Kosher Salt
2 Tbs Black Pepper
2 Tbs Paprika
2 Tbs Brown Sugar

Bourbon BBQ Sauce:

1 Tbs olive oil
1 cup onion
3 cloves of garlic
3/4 cup Uncle Nearest 1856 Premium Aged Whiskey
2T cider vinegar
1T Worcestershire
1T tomato paste
1 tsp mustard
¼ tsp cayenne
1/3 c brown sugar
2 cups ketchup
Salt & pepper

Bourbon-Ginger Pecan Pie

From Eggin’: David Rose Cooks on the Big Green Egg

Feeds: 8 People

1 cup pecan wood chips, soaked for 1 hour in 2 cups of water

Filling Ingredients:

1 cup dark corn syrup
1 tablespoon molasses
4 large eggs, beaten
2 tablespoons butter, melted
Seeds from 1 vanilla bean
2 tablespoons Uncle Nearest 1856 Premium Whiskey
1 tablespoon Domaine de Canton ginger liqueur
¾ cup granulated sugar
¼ teaspoon kosher salt
1 (9-inch) unbaked or frozen deep-dish pie crust
1 ½ cups coarsely chopped roasted pecans

Egg Wash Ingredients:

1 medium egg
1 teaspoon water

Fresh Whipped cream or vanilla ice cream, for serving

Tennessee Buck

The Ingredients

  • 2 oz  Uncle Nearest 1856
  • 0.5 oz  Fresh Lemon Juice
  • 0.25 oz  Ginger Syrup
  • Ginger Beer
  • Lemon Wheel Garnish

The Method

Fill a highball glass with ice. Combine Uncle Nearest 1856, fresh lemon juice, and ginger syrup. Stir to combine. Top with ginger beer. Garnish with a lemon wheel.

Rye Smash

The Ingredients

  • 2 oz  Uncle Nearest Straight Rye
  • Lemon Wedges
  • Mint Leaves
  • 0.5 oz - 0.75 oz  Simple Syrup
  • Seasonal fruit (optional)

The Method

Combine lemon wedges, mint leaves, simple syrup, (and seasonal fruit if using) in a cocktail shaker. Muddle gently to release juice and oils. Add Uncle Nearest Straight Rye and ice. Shake vigorously for 8-10 seconds. Double strain into a rocks glass with fresh ice. Garnish with a mint sprig.

Gold Rush

The Ingredients

  • 1.5 oz  Uncle Nearest Straight Rye
  • 0.75 oz  Fresh Lemon Juice
  • 0.75 oz  1:1 Honey Syrup
  • Lemon Wheel Garnish

The Method

Combine all liquid ingredients in a cocktail shaker with ice. Shake for 8-10 seconds. Strain into a rocks glass over fresh ice. Garnish with a lemon wheel.

Mint Julep

The Ingredients

  • 2 oz  Uncle Nearest 1856
  • 6-8  Mint Leaves
  • 0.25 oz  Simple Syrup (or more to taste)
  • Hella Cocktail Co. Aromatic Bitters (optional)
  • Mint Sprig Garnish

The Method

Gently muddle the mint leaves and simple syrup in a Julep cup or rocks glass. Add Uncle Nearest 1856 and pack the glass with crushed ice. Stir until the outside of the glass is frosted. Add more ice to form a small dome. Garnish with a mint spring and aromatic bitters (optional).
