2022 Honor Your Legacy Cocktail Competition Finalists:

40ml (1⅓ ounces) Uncle nearest 1856
15ml (½ ounce) Discarded cascara vermouth
15ml (½ ounce) Pear Oleo
30ml (1 ounce) Atopia spiced citrus
50ml (1⅔ ounces ) Soda water
Garnish: lemon coin discard/ lemon wedge

Stir all ingredients without soda. Pour over ice into a frozen highball glass. Top with soda. Cut a coin-size disc from a lemon peel and squeeze over drink to express the lemon oil, then discard. Garnish with a lemon wedge.

Poire Oleo:
500g washed pears
500g Caster SugarWash and cut pears in 1cm cubes, mix with sugar in a vacuum bag and leave it overnight until the sugar is dissolved. Strain and bottle.

CORN by Meg Klosterman (Ohio)

50ml Uncle Nearest Premium Whiskey
20ml Charcoal Roasted Corn Syrup
10ml Nixta Licor de Elote Liqueur
2 dashes of Angostura Bitters
Garnish: Poached and caramelized corn on the cob disk.

Add ingredients to a stirring tin. Top with ice. Stir as an Old Fashioned. Strain into a rocks glass over a block of ice and garnish. Enjoy!

Charcoal Roasted Corn Syrup:
Start by roasting two ears of corn with husks removed over a charcoal fire. Roast the corn to the point where it would be so burnt it would just about be unpleasant to eat. Cut the corn from the cob. Weight the corn. In a sealed container, place the corn and half of its weight (in grams) of sugar. Add 100ml of water. Let sit for around 24hrs. (Note- the longer it sits the better, this way your syrup can soak up as much flavor as possible.) After it’s infused, add enough water to dissolve any leftover sugar. Remove the corn kernels, stir the syrup until no sugar remains. Taste and adjust if needed- each batch will be different! Strain through a coffee filter to remove any impurities!
